
Ingredients for Foxtail millet & Curd bowl:
- 1 cup foxtail millet
- 2 cups water
- 1 cup plain yogurt (curd)
- 1 small onion, finely chopped
- 1 small cucumber, finely chopped
- 1 small tomato, finely chopped
- 2 tablespoons fresh coriander leaves, chopped
- 1 tablespoon lemon juice
- Salt to taste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon black pepper powder
- Optional toppings: roasted peanuts, and pomegranate seeds.
Steps-
1. Rinse the foxtail millet under running water to remove any impurities.
2. In a saucepan, add the rinsed foxtail millet and water. Bring it to a boil over medium heat. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15-20 minutes or until the millet is cooked and tender. Remove from heat and let it cool.
3. In a mixing bowl, whisk the plain yogurt until smooth. Add chopped onions, cucumber, tomato, coriander leaves, lemon juice, salt, cumin powder, and black pepper powder. Mix well.
4. Once the cooked foxtail millet has cooled down, fluff it with a fork to separate the grains.
5. Add the fluffed millet to the yogurt mixture and mix gently until well combined.
6. Taste and adjust the salt and seasoning according to your preference.
7. If desired, garnish with roasted peanuts and pomegranate seeds for added texture and flavor.
8. Serve the Foxtail Millet and Curd Meal chilled or at room temperature as a healthy and refreshing meal option.
