Quinoa is technically a seed and is considered part of a small group of grains called pseudocereals, like amaranth and buckwheat. Ingredients for Southwest Quinoa Salad:
- 1 cup boiled Quinoa
- ½ bowl chopped Red and yellow bellpeppers
- 1 cup boiled corn
- ½ chopped onion
- 4-5 sliced cherry tomatoes
- 1 spoon chopped jalepenos
- 1 tbsp virgin olive oil
- 1 lemon squeezed
- Salt and pepper to taste
Instructions:
- In a large bowl, add boiled quinoa, bellpeppers, onion, , halved cherry tomatoes, corns, and jalepenos.
- Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.
- Pour the dressing over the quinoa and vegetables and toss gently to coat.
- Sprinkle the chopped fresh basil over the top.
- Serve immediately or refrigerate until ready to serve.
