Quinoa, recently has gained a lot of popularity in India, and we see it easily available in most of the supermarkets. But, one major challenge that is commonly faced with making it a staple part of our kitchen is that it requires an acquired taste and different cooking style. But, in this blog, we break this myth and share some mouth-watering quick Indian recipe, Quinoa Khichdi, which is commonly cooked in every household that too using Quinoa as the main ingredient.

Quick Quinoa Khichdi Recipe
Ingredients:
- 1 cup quinoa
- 1/2 cup arhar dal
- 1 onion, chopped
- 1 tomato, chopped
- 1 carrot, chopped
- 1/2 cup beans, chopped
- 1/2 tsp cumin seeds
- 2-3 green chilies, slit
- 1/2 tsp red chilli powder
- Salt to taste
- 2 tbsp ghee or oil
- 4 cups water
- Coriander leaves, chopped
Instructions:
- Rinse quinoa and moong dal until water runs clear.Soak them for an hour.
- Heat ghee or oil in a pressure cooker. Add cumin seeds, let them splutter.
- Sauté onions until golden.
- Add tomatoes, vegetables, and spices (turmeric, red chillu, salt). Stir well.
- Add quinoa and dal, mix thoroughly. Pour in 4 cups of water.
- Pressure cook for 2-3 whistles (or Instant Pot: high pressure for 6-7 minutes).
- Release pressure, stir gently, adjust consistency with hot water if needed.
- Serve hot with yogurt, pickle, and papad.
Quinoa is technically a seed and is considered part of a small group of grains called pseudocereals, like amaranth and buckwheat.
