Quinoa Upma

Quinoa upma — a wholesome, flavorful, and satisfying breakfast option that promises to fuel your day with goodness. Quinoa, often hailed as a complete protein, brings a wealth of nutrients to the table. Packed with essential amino acids, fiber, vitamins, and minerals, it’s a fantastic addition to any diet, especially for those seeking plant-based protein sources.

Ingredients for Quinoa Upma:

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil/ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 cup chopped onions
  • 1/2 cup mixed vegetables (carrots, peas, bell peppers)
  • 1/4 cup chopped tomatoes
  • 1/2 tsp turmeric powder
  • 1 tsp ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges (optional)

Instructions:

  1.  Rinse quinoa under cold water and drain. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all water is absorbed.
  1.  Heat olive oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  1. Add mixed vegetables, tomatoes, turmeric powder, and ginger-garlic paste. Cook until the vegetables are tender.
  1. Gently fluff the cooked quinoa with a fork and add it to the pan. Mix well and let it cook for a few more minutes.
  1. Season with salt and garnish with fresh coriander leaves. Squeeze a bit of lemon for an extra zing!
