- 1 cup quinoa
- 2 cups water

- 1/4 cup chopped tomatoes

- Salt to taste

Instructions:
- Rinse quinoa under cold water and drain. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all water is absorbed.
- Heat olive oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add mixed vegetables, tomatoes, turmeric powder, and ginger-garlic paste. Cook until the vegetables are tender.
